The mat erial, finish, and size of cookware affect baking

Dark, coat ed and dull pans absorb heat more readily t han light ,
shiny pans. Pans t hat absorb heat more readily can result in
a browner, crisper and t hicker crust . If using dark and coat ed
cookware check food earlier t han t he minimum cook t ime. If
undesirable result s are obt ained wit h t his t ype of cookware
consider reducing oven t emperat ure by 25º F next t ime.
• Shiny pans can produce more evenly cooked baked goods
such as cakes and cookies.
• Glass and ceramic pans heat slowly but ret ain heat well.
These t ypes of pans work well for dishes such as pies and
cust ards.
• Air insulat ed pans heat slowly and can reduce bot t om
