Ingredients
300 g frozen spinach
Salt, pepper, nutmeg
2 garlic cloves
4 thinly cut turkey fi llets
125 ml chicken stock
3 tbsp cream
2 tbsp sauce thickener
Sherry
Kitchen string
>> Tip:
For a distinctive fl avour, add 8
fi nely chopped sardine fi llets to
the spinach. Chicken fi llet or veal
can be substituted for turkey.

Defrost the spinach (see
below for settings).

Sprinkle salt, pepper and
nutmeg on the defrosted
spinach to taste. Finely chop the
garlic cloves and stir in.

Spread the spinach
mixture onto the turkey
fi llets, roll up tightly and tie up
with kitchen string.

Pour the chicken stock into a
solid cooking container, sea-
son with cream, salt, pepper and
nutmeg. Add the roulades and
cook (see below for settings).

Pour the stock into a pan,
add sauce thickener and
season with sherry to taste.

Pour some of the sauce over
the roulades to serve. Best
served with wild rice or boiled
potatoes.
